Foodie Friday – Best Fresh Tomato Salsa

3 cups chopped tomatoes

1/2 cup chopped green bell pepper

1 1/4 cup onion, diced

1/4 cup minced fresh cilantro

2 tablespoons fresh lime juice

4 teaspoons chopped fresh jalapeño pepper

1/2 teaspoon ground cumin

1/2 teaspoon kosher salt

1/2 teaspoon ground black pepper

Directions

Stir the tomatoes, green bell pepper, onion, cilantro, lime juice, jalapeño pepper, cumin, salt, and pepper in a bowl. Chill and serve with tortilla chips.

3) Theme Parks – Disney World, Universal Studios, Six Flags & More…theme parks are visited by thousands during the week of Spring Break!

4) Skiing – Finish out the winter season with a ski vacation. Many families flock to the slopes to enjoy the final fun of snow & sun!

5) Home Is Where It’s At – Board games, front yard baseball, family barbecue, and more! Many find the comforts of home just as relaxing as leaving town. Many choose to turn off electronics, and let nature be their guide!

Foodie Friday ~ Sliced Strawberry and Spinach Salad

2 tablespoons sesame seeds

1 tablespoon poppy seeds

1/2 cup white sugar

1/2 cup olive oil

1/4 cup distilled white vinegar

1/4 teaspoon paprika

1/4 teaspoon Worcestershire sauce

1 tablespoon minced onion

10 ounces fresh spinach – rinsed, dried and torn into bite-size pieces

1 quart strawberries – cleaned, hulled and sliced

1/4 cup almonds, blanched and slivered

Directions

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.

In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.

Thursday Crafts For Kids ~ Paper Sand Dollars

Round cotton pad or circle of packing foam

How to make it

To make your own paper sand dollars, first cut a pair of circles, about 3 inches in diameter, from white or cream-colored card stock.

Sandwich the 2 circles together with a round cotton pad or circle of packing foam between them.

Glue the circles together, using clothespins to hold them in place until the glue has dried.

Finally, glue on a star-shaped design of dry barley, white beans, or uncooked pasta shells.
